Most coffees from Colombia are processed using the traditional washed method. This lot, however, goes through a more complex honey process that involves leaving the bean to dry in its mucilage for 20-45 days, using the heavy, cold winds of the region to help promote an even drying process. The producers of this region, an indigenous community called the Inga, were part of the northernmost Inca empire, which colonized the south of Colombia in the late 14th century. Land here is communal, and the population is ruled by a “cabildo” or group of elders who make sure ancestral traditions are upheld. The population of this area have unfortunately been affected by earthquakes in recent years and have turned to specialty coffee to help produce income for the region. In the cup we find smooth but rich chocolate and caramel notes pleasantly mixed with a wonderful fruited sweetness. This is a versatile coffee that tastes great black or with a little milk and can even be used as a single origin espresso.
We ship freshly roasted coffee Monday through Friday via UPS ground. Most orders placed before 2pm EST will ship same day.
Delayed, Lost or Stolen Packages
We will do our best to help troubleshoot with you, but we
cannot control what happens when your package leaves the roasting
facility. Once the package has been picked up, it is out of our hands.
Holidays, severe weather, carrier staff shortage and high package volumes are causing delays in package transit time.
As a small business, we are unable to absorb the costs of
packages being lost in transit. We cannot refund orders that are marked
as delivered with a tracking number, even if a customer is stating they
haven’t received the package.

In order to balance getting your coffee out to
you as quickly as possible with freshness of roast we ship all coffee as
ordered within one week of the roast date. We typically roast
Wednesdays and Fridays.
In our experience most coffees
taste best after a few days rest, and high quality coffees stay at peak
flavor up to six weeks post roast.
