The microclimate of this region results in a cup that stands out for its bright acidity, delicate body, and well-balanced complexity—traits that set it apart from other coffees in Huila.\u003cbr\u003e     The coffee is produced by members of the CADEFIHUILA Cooperative, a well-established organization supporting 27 municipalities in Huila. With six decades of experience, the coop plays a key role in maintaining quality and price stability for its members while promoting certifications like Fairtrade and Rainforest Alliance. Cherries are traditionally washed, fermented for 12 hours, and double-rinsed before being dried by sun or machine.
