Alirio, along with his wife Anayibe and neighbors make up the Los Guacharos Collective. Los Guacharos are a group of independent, quality-focused small producers in Bruselas, Southern Huila. The group is collectively converting to organic agriculture, making their own fertilizers and fungicides, installing complex water filtration systems that use gravity, stones and sand to remove all mucilage residues from waste water to not contaminate water systems.
The members of the group have started the conversion to fully ecological and regenerative production, close to biodynamics. The Guacharos produce a brew called Super Magro, made up of organic minerals and waste products, molasses, bone ash and manure. It is then fermented with microorganisms collected from virgin soils and used as a fertilizer and protectant from disease. The Super Magro is edible, incredibly effective, and represents a producer-driven grassroots movement empowering producers to increase soil health, reduce costs and stop dependence on chemicals.
Alirio’s focus has been on specializing on more exotic cultivars including Pink Bourbon, Bourbon Aji, Chirroso and Sidra. This is a single variety lot of Pink Bourbon, one of our favorites from Colombia. Cherries are picked as ripe as can be, de-pulped the same day, fermented until they reach their ideal washing point for maximum sweetness, and fully washed. We were blown away when tasting the samples and could not wait to get the coffee stateside and roasted to share with everyone. If you love great Colombian micro lot coffees, this one is a can't miss!
We ship freshly roasted coffee Monday through Friday via UPS ground. Most orders placed before 2pm EST will ship same day.
Delayed, Lost or Stolen Packages
We will do our best to help troubleshoot with you, but we
cannot control what happens when your package leaves the roasting
facility. Once the package has been picked up, it is out of our hands.
Holidays, severe weather, carrier staff shortage and high package volumes are causing delays in package transit time.
As a small business, we are unable to absorb the costs of
packages being lost in transit. We cannot refund orders that are marked
as delivered with a tracking number, even if a customer is stating they
haven’t received the package.

In order to balance getting your coffee out to
you as quickly as possible with freshness of roast we ship all coffee as
ordered within one week of the roast date. We typically roast
Wednesdays and Fridays.
In our experience most coffees
taste best after a few days rest, and high quality coffees stay at peak
flavor up to six weeks post roast.
