We are proud to offer this wonderful coffee cultivated by a group of dedicated producers in the upper part of the Palestina municipality in Huila, Colombia. Grown at 1,700 masl under shade and native trees, this lot features a blend of Caturra and Tabi varieties selected across 2,750 hectares. The microclimate of this region results in a cup that stands out for its bright acidity, delicate body, and well-balanced complexity—traits that set it apart from other coffees in Huila.
The coffee is produced by members of the CADEFIHUILA Cooperative, a well-established organization supporting 27 municipalities in Huila. With six decades of experience, the coop plays a key role in maintaining quality and price stability for its members while promoting certifications like Fairtrade and Rainforest Alliance. Cherries are traditionally washed, fermented for 12 hours, and double-rinsed before being dried by sun or machine. This process results in a clean and classic cup profile with notes of caramel, nougat and cocoa.
