This tasty single variety lot is the result of a group effort from several small independent producers throughout Huila. Grown high up in nutrient-rich volcanic soil between 1,550 and 2,000 meters this coffee features the unique Pacamara variety. Pacamara is an exceptional hybrid, the result of an artificial cross between the Pacas variety — a natural mutation of Bourbon — and the Red Maragogipe, known for its extra-large beans and unique characteristics. Originally developed in Central America, this variety has found an ideal terroir in the Huila region of Colombia, where the altitude and climate allow it to fully express its potential
This lot is fully washed. After picking and peeling the coffee cherries, the farmers let the beans ferment in water tanks for a longer-than-usual period (36 to 48 hours). This extra fermentation time is the secret behind the coffee’s incredibly juicy and vibrant taste. Afterward, the beans are washed and slowly dried in the sun until they are perfectly ready for export.
The collective effort required to procure and produce this lot has really paid off. With notes of clementine, guava and pineapple juice the extended fermentation gives it just the right amount of extra sweetness and complexity while still tasting really clean and bright like a classic washed processed coffee should.
