This pink bourbon lot comes to us from La Florida farm in Algeciras, Huila. Located at 1800masl, this 3-hectare farm has been run by Jarbinson Arias and his family for the past five years. Aside from milling, they carry out every part of coffee processing at La Florida. To produce this lot, the cherries are first harvested and floated. Then they're put under a controlled oxidation for 24 hours before being de-pulped and placed in fermentation tanks for 36 hours. After that, they're carefully washed to remove impurities before being patio-dried for 20 days.
Pink Bourbon boasts a unique combination of acidity and sweetness - citrus fruit flavors balanced by delicate notes of white florals and honey. While we normally roast this variety pretty light, we've decided for this particular lot to develop the coffee a bit further for those who favor more of a medium roast. Our goal was to temper the vibrant acidity without dulling it and to accentuate the natural sweetness of this variety. We think we struck a really nice balance of preserving what is great in this coffee while delivering a rich satisfying cup.
