Linarco Rodríguez Ospina is a third-generation coffee grower from Palestina, deep in the southern highlands of Huila, Colombia. At his two farms, Los Cedros and El Diviso, Linarco cultivates the exceptional Pink Bourbon variety at 1,780 meters above sea level in the rural community of El Silencio.
Across five hectares, four of which are dedicated to a thoughtful mix of coffee and plantain, Linarco tends to over 9,000 Pink Bourbon trees, nurturing each with careful attention. His dedication extends well beyond cultivation: he manages the entire natural post-harvest process himself, refining every step to highlight the coffee's unique character.
During the main harvest in October and November, a small team of six local pickers hand-selects only the ripest cherries. Each day’s harvest is floated to remove any imperfections, then sealed in buckets for a 72-hour anaerobic fermentation, a technique that brings out complex flavors in the coffee beans. The cherries are then carefully dried on raised beds inside a parabolic greenhouse, a process that takes 20 to 24 days, until they reach the ideal moisture content.
Linarco is proud of his work, and deeply thankful to those around the world who believe in it. “I’m grateful for the chance to share my coffee," he says. "Every purchase supports not just my farm, but a more sustainable way of growing one that protects our water, our soil, and our future.” He has placed coffees in the top tier of the Cup of Excellence several times, coming in second place in 2019.
This is an exceptional and truly unique coffee that is bursting with tropical fruit flavors of guava, tamarind and papaya. We recommend brewing a slightly larger cup than normal because this one is so tasty you're going to want more when its done!
We ship freshly roasted coffee Monday through Friday via UPS ground. Most orders placed before 2pm EST will ship same day.
Delayed, Lost or Stolen Packages
We will do our best to help troubleshoot with you, but we
cannot control what happens when your package leaves the roasting
facility. Once the package has been picked up, it is out of our hands.
Holidays, severe weather, carrier staff shortage and high package volumes are causing delays in package transit time.
As a small business, we are unable to absorb the costs of
packages being lost in transit. We cannot refund orders that are marked
as delivered with a tracking number, even if a customer is stating they
haven’t received the package.
For UPS claims, please email us at georgio@georgioscoffee.com
When checking out, *Please make sure your address is correct!*
In order to balance getting your coffee out to
you as quickly as possible with freshness of roast we ship all coffee as
ordered within one week of the roast date. We typically roast
Wednesdays and Fridays.
In our experience most coffees
taste best after a few days rest, and high quality coffees stay at peak
flavor up to six weeks post roast.
