This coffee comes to us from Santa Maria, Huila in Colombia from producers Miller and Johany Sarmiento. They inherited the farm from her father 18 years ago and have been working to improve the farm and the coffee quality ever since. Their farm sits at an elevation of approximately 1,952 m.a.s.l. and consists of 8 hectares of land, 4 of which are used for growing coffee. For this lot, Miller starts by hand picking and fermenting the coffee for 24 hours in cherry before de-pulping. He then de-pulps, and ferments for an additional 36 hours. Upon washing, the coffee is laid out to dry for between 10-14 days, depending on the climate.
