   We are beyond excited to get to share these limited coffees with everyone this year.  This box set consists of one 12oz bag of the Hops Cofermented Geisha, one 150 gram tin of the Lychee coferment and one 75 gram tin of the watermelon coferment.  We have an extremely limited amount of these coffees and decided this was the best way to share the most of these coffees with the most people.

These are on the very experimental side of the flavor spectrum so we would suggest only purchasing if you are up for an adventure.

     Edwin Noreña took over his family's farm Finca Campo Hermoso after three generations.  Being an agricultural engineer by trade, he decided to create a new legacy for his farm focusing on high quality coffees.  Utilizing carefully curated cultivars such as Pink Bourbon, Sidra and Geisha and precise processing methods designed to express the most surprising, memorable, and delicious coffees possible within his resources, he has established a lofty if not controversial reputation throughout the world of specialty coffee.
      Processing, particularly the fermentation step, always interested him because of its potential to transform raw coffee seeds into a remarkably unique sensory experience for coffee drinkers. A breakthrough moment for him was realizing that the sugary, residual liquid produced during whole cherry fermentation could be used again in subsequent fermentations to add natural sugars, while also serving as a solvent for flavoring agents. Over the years Edwin has co-fermented with chilis, ginger, brewers hops, and fruit to develop unique flavors in his microlots.
     Our selections for this year are a lychee coferment, a watermelon coferment and a hops coferment.  This style of processing is very difficult to pull off in a way that does the coffee justice, but Edwin is one of if not the very best at this technique and we couldn't be happier with how these coffees taste.

Lychee Coferment
  Edwin’s processing for this particular lot involved three distinct fermentations: one of purely fresh whole coffee cherries; a second “classic washed” fermentation of depulped parchment; and a final fermentation of the parchment submerged in a carefully formulated solution of coffee cherry must (a biproduct of the first fermentation) and dried lychee. Each stage adds a particular bit of uniqueness to the final coffee, so that by the end the coffee is truly one of a kind in the world.  The flavor profile is delicate and sophisticated, and by far the most approachable coferment we’ve tried. It tastes like coffee cofermented with lychee fruit, and has flavors reminiscent of white tea, sweet peach, and orange.

 Watermelon Coferment
     Edwin used a similar three stage fermentation for this lot, however for the third stage he used a combination of fresh and dried watermelon.  The flavor profile is instantly recognizable, and immediately reminiscent of watermelon candy.  Of the three coffees in this set, this one has the most intense and distinct flavor of the fermentation.  It is incredibly sweet and juicy.

 Galaxy Hops Coferment
   Noreña picked this coffee from Gesha trees, using a brix meter to selectively harvest, after which the cherries soak underwater for about an hour. Primary fermentation takes 72 hours and occurs in whole cherry, in a sealed tank. The coffee is then pulped and set for secondary fermentation for 96 hours, backslopped with the mossto from the first fermentation. This mossto is infused with Galaxy Hops and is recirculated every twenty-four hours for a total of four days in secondary maceration. This heavily fermented “honey” coffee is then taken to raised beds to dry for 22 days, followed by a controlled warehouse humidity stabilization for an additional 8 days. The result is a highly amplified flavor profile with extreme floral notes, citrus sweetness, and of course trendy IPA beer.

We ship freshly roasted coffee Monday through Friday via UPS ground. Most orders placed before 2pm EST will ship same day.

Delayed, Lost or Stolen Packages 

We will do our best to help troubleshoot with you, but we
cannot control what happens when your package leaves the roasting
facility. Once the package has been picked up, it is out of our hands. 

Holidays, severe weather, carrier staff shortage and high package volumes are causing delays in package transit time. 

As a small business, we are unable to absorb the costs of
packages being lost in transit. We cannot refund orders that are marked
as delivered with a tracking number, even if a customer is stating they
haven’t received the package.

When checking out, *Please make sure your address is correct!*

In order to balance getting your coffee out to
you as quickly as possible with freshness of roast we ship all coffee as
ordered within one week of the roast date. We typically roast
Wednesdays and Fridays.

In our experience most coffees
taste best after a few days rest, and high quality coffees stay at peak
flavor up to six weeks post roast.
