This coffee comes from Suyo, a corner of the Ayabaca province in Cusco, nestled in Peru’s high jungle. It’s a land of abundant rivers and streams, lush vegetation, and a tropical climate averaging around 23°C—conditions that, at 2,000 meters above sea level, create an exceptional environment for growing quality coffee.
Suyo is a region dedicated primarily to agriculture and livestock farming. The Bellota family was the first to establish coffee plantations at this altitude, achieving excellent results with the washed process. The predominantly cold climate of the region causes the coffee cherries to mature more slowly, resulting in dense, complex coffee beans with exceptional cup quality. Upon picking and de-pulping the coffee is dried slowly under shade for 20 days ensuring the pristine cup quality is maintained.
This is a wonderfully sweet, yet approachable coffee roasted on the lighter side of our roasting spectrum in order to highlight the stone fruit and candied walnut sweetness along with hints of unrefined sugars such as panela.
