Guaya'b means "mutual support" in the indigenous Mayan language Popti. Nearly all of the 600 members of this 34 year old cooperative are of Maya descent. The cooperative invests in sustainability, as demonstrated by their many certifications: Smithsonian Bird Friendly, Organic, and Fairtrade. The farmers of the Guaya’b Cooperative grow coffee under a dense forest canopy that doubles as the winter home for dozens of species of migratory birds as well as local flora and fauna. Guaya’b has perfected the art of picking, depulping and fermenting their coffee to produce deep, juicy, and full-flavored coffee with a truly distinctive character. This coffee is amazing as a single origin espresso or as a filter brew. We love its versatility and the care with which it was produced. In order to balance getting your coffee out to you as quickly as possible with freshness of roast we ship all coffee as ordered within one week of the roast date.
In our experience most coffees taste best after at least a few days' rest, and high-quality coffees stay at peak flavor up to six weeks post roast.
